A refreshed lineup of dishes has been introduced at The Hollywood Brown Derby in Disney’s Hollywood Studios, adding several new seafood, meat, and dessert options to the long-running table-service restaurant’s menu.





Among the new additions is one appetizer, char-grilled octopus, along with four entrées: pan-roasted halibut, char-grilled octopus, fried pork chop, a short rib dish, and filet mignon. Here’s a breakdown of what each dish is served with:
- Char-grilled Octopus ($20): Herb-roasted potatoes, chimichurri, and chipotle-harissa aïoli
- Pan-roasted Halibut ($54): Leek vichyssoise risotto, pea, and citrus
- Filet Mignon ($56): Rhubarb-red wine demi-glace, Yukon gold potato, and braised endive
- Braised Center-cut Short Rib ($54): Hominy purée, roasted vegetables, smoky adobo glaze, and beef jus
- Fried Pork Chop ($45): Yuzu beurre blanc and summer vegetables


On the dessert side, new menu offerings include Honey Pot De Crème ($14), featuring strawberry compote, salted streusel, and ginger sponge cake. There’s also Vanilla-Fruit Cheesecake ($14), featuring vanilla cheesecake with peach sponge, strawberry panna cotta, streusel, strawberry-peach compote, mango coulis, and a crunchy tuile.
