Founded by Steve Lewis, Gideon’s Bakehouse opened in 2016 at Orlando’s East End Market before expanding to Disney Springs in 2020. Known for its half-pound cookies, including flavors like chocolate chip, coffee cake, banana bread chocolate chip, and rotating limited editions, the bakery has built a devoted following. Now, Lewis has announced a new concept set to open at Disney Springs.

Called Six Ravens, the restaurant will specialize in savory hand pies Lewis has dubbed “coffyns,” fluffy yeast rolls filled with a rotating lineup of flavors. The shop will open in the former Art of Shaving space, a few doors down from Gideon’s Bakehouse.

Lewis says the idea has been years in the making and rooted in collaboration. Six Ravens will feature offerings developed with local chefs, including Eliot Hillis and Seth Parker of Red Panda Noodle and Bruno Zacchini of Pizza Bruno.

“Six Ravens is the result of collaborating with the family we’ve created at Gideon’s, and our friendships within the community, ” Lewis said. “We look forward to being a gateway to local flavors on the international stage by spotlighting our Orlando superstars.”

According to Lewis, he spent years experimenting with coffyn fillings during downtime with friends across Orlando’s food scene.

“I got my start at Disney Springs as a secret menu item at the Polite Pig,” he said. “It’s important to pay it forward and bring more local flavors to the international crowds we meet every day.”

While the Six Ravens space will be compact, Lewis says guests should expect an immersive experience.

Gideon’s Bakehouse art director Michael Reyes will curate the design and visuals, and Studio 407 will oversee the buildout.

The name “Six Ravens” first appeared on a Gideon’s menu card in November 2023, featuring a cloaked figure surrounded by ravens. Lewis has hinted for years that characters from Gideon’s would eventually branch out into their own adventures.

Beyond coffyns, the menu will include smashed potato fritters served with a range of dips, from sweet heat to a honey mustard. Six Ravens will also collaborate with Sideward Brewing and The Ravenous Pig Brewing Co. on beer offerings. Sweet treats will round out the menu.

The full lineup has not yet been finalized. Lewis plans to reveal flavors and chef collaborations gradually as the opening approaches, which is expected in the third quarter. Hillis has already hinted that his contribution may feature chicken curry.
